Chilled Couscous with Kale and Cucumber
1/2 teaspoon minced garlic
Juice and zest of 1/2 lemon
1/2 teaspoon crushed Aleppo chile
2 teaspoons finely chopped mint, plus additional whole leaves for garnish
1 teaspoon sea salt
1 teaspoon black pepper
1/4 cup olive oil
3 cups cooked Couscous, chilled
1 cup shredded kale, trimmed
1 cup diced baby cucumber
1/2 cup diced red onion
1 cup halved cherry tomatoes
1/4 cup grated Romano cheese
Combine garlic, lemon juice and zest, crushed chile, mint, salt and pepper in a large bowl.
Slowly whisk in olive oil until evenly incorporated.
Separate Couscous by rubbing between your hands, and add to bowl along with remaining ingredients.
Let sit for 30 minutes before serving, and garnish each serving with a fresh mint sprig.
Makes 4 to 8 servings

I actually did not put this through a nutrition program, but for those who are calorie conscience, I would take out some of the couscous and add more vegetables. Hope that helps!

I don’t know why I’ve never made couscous like this. It’s so simple and looks delicious! I think I may just make this tonight. Thank you for sharing this recipe. I now have a new meal. 🙂

I did make it, or should I say — a version of it. I was missing a couple of ingredients, namely tomatoes and kale, which I substituted with red peppers and spinach. It turned out very well. It was as delicious as I thought it’d be. Again, thank you for sharing.

Did something similar with substitutions that were on hand:
1 cup dry couscous cooked in 2 cups 3:1 homemade stock/ water
No lemon zest
Tbsp bottled lemon juice
More garlic
Slightly less salt and pepper
Whichever dry chili
dry tarragon basil and marjoram instead of __ fresh mint
White onion
Less tomato
Some celery for cucumber
Red leaf lettuce for kale
Lots hemp seed for protein minerals and EFAs
No cheese
Sunflower oil 4 tbsp
